The great Bard Robbie Burns birthday was on Friday. We think this is good reason to take a look at Haggis recipes, the real deal or vegetarian.

TRADITIONAL HAGGIS

INGREDIENTS
1 Beef Bung
Heart, liver and lungs from one lamb
450g beef or lamb trimmings, fat and lean
2 onions finely chopped
225g oatmeal
1 tbsp salt
1 tsp ground black pepper
1 tsp ground dried coriander
1 tsp mace
1 tsp nutmeg
Beef stock
water, enough to cook the haggis

COOKING INSTRUCTIONS
Take the cooked heart, liver and lungs and mince into a fine grind.
In a bowl blend the remaining ingredients except the stock and water.
Once blended add some stock to loosen the oats.
Wash the bung and stuff with ingredients.
Sew the bung up allowing some space for the oatmeal to expand.
Once sewn, place in a large pt and just cover with water.
Prick with a pin and boil for a minimum of 40 minutes.
Serve with Neeps and Tatties. (Mashed turnip and mashed potatoes.)

VEGETARIAN HAGGIS

Serves 4

4-5 shallots, finely chopped
2 cloves garlic, finely sliced
30g butter
75g white mushrooms, roughly chopped
Generous pinch of cayenne pepper
½ tsp ground cinnamon
½ tsp allspice, ground in a pestle and mortar
A few scrapes of freshly grated nutmeg
3 carrots, peeled and grated
75g red lentils
The juice and zest of a lemon
About 500ml vegetable stock
Small bunch rosemary, leaves stripped and finely chopped
Small bunch thyme, leaves stripped
½ tin of red kidney beans, rinsed
50g pinhead oatmeal
1 egg (optional)
Vegetarian sausage casing (optional)

In a medium-sized casserole, sweat the onions and garlic in the butter until very soft. Add the mushrooms and sauté until they’ve released their water and started to brown. Add the spices and continue cooking for a couple of minutes, then add the carrots, lentils and lemon zest, and pour over the boiling stock until the ingredients are just submerged. Simmer, covered, until the lentils are soft – about 15 minutes.

Mash the beans roughly with a fork, then add them add to the pan with the oatmeal. Add a little more stock if you think it’s needed, but remember that the point of the oatmeal is to absorb the last of the liquid so you’re left with something relatively firm. Stir over a low heat until the oatmeal has plumpened. Add the lemon juice, then taste and correct seasoning – be quite generous with the salt.*

Spoon out the haggis and serve with neeps and tatties or, better in my opinion, clapshot and homemade oatcakes.

*At this point, if you like, let the haggis cool completely, then beat an egg and stir it thoroughly into the mix. Stuff this into a large vegetarian sausage skin, making sure there are no air pockets, then wrap tightly in tinfoil. Poach gently for half an hour before unwrapping, then cut it up wi’ ready slicht.

It seems like that Vancouver is in for a dollop or Snow over the next day or so and we all know what that means – Ski season is well and truly underway!

It tends not to snow too much in Vancouver, but when it does – it really is a stunning sight, especially if you manage to get a rare glimpse of the sun that catches the glistening snow sparkling off the mountains that tower over the city.

Vancouver is spoiled for choice when it comes to Winter sports, and the choices come from 3 stunning peaks to use as your outdoor adventure playground during the winter Season.

On any of the 3 mountain resorts in the area you will be able to enjoy Skiing, Snowboarding, Snow Shoeing, tubing and a whole lot more….
There has been plenty of precipitation falling over the last few weeks (which is normal for this time of year) So whats falls as the wet stuff down at Sea Level, is almost certainly falling as the white stuff at the top of the peaks. To date, roughly up to 300cm of snow has accumalated on the mountain tops, in the last 24 hours alone there has been up to 10cm, and that amount is set increase dramatically over the next few days.

GROUSE MOUNTAIN
Nestled in between Cypress and Seymour, Grouse mountain is by far one of the more popular destinations to visit when it comes to Winter Sports. It is in a great location as this is the mountain that sits directly over North Vancouver and dominates the city skyline to the North of Vancouver itself. Along the way, you can even stop off at the Capilano Suspension Bridge, where the whole area is currently illuminated for the Festive Season. Capilano Canyon Lights runs until January 5th and illuminate the bridges and park from 4pm till 9pm.
At Grouse there is a fantastic restaurant that overlooks the city, an open are Ice rink, and the slopes here are suitable for beginners and the more experienced.

Mount Seymour
This is a great place for any beginner to come and learn to Ski as it offers shorter runs to practice and learn, it also has a great rugged feel to it, so if you are searching for the quintessential ‘outdoors’ adventure, Seymour is the place to be.

Cypress Mountain
Cypress mountain was used during the 2010 Winter Olympics for the alpine events. Cypress Park has some more challenging slopes so if you want to test yourself this is the place to be.

And of course – WHISTLER
Th gem in the crown during the Winter season is Whistler Blackcomb and Whistler Village.
A beautiful Alpine Village that was home to the majority of events during the 2010 Winter Olympics, this really is the place to go if you are a Winter Sports junkie.
Located a couple of hours north of Vancouver, there are many ways to get here, and we feel that one of the better ways is to use Landsea Tours. Landsea tours will pick you up at the hotel and take you for a full day out to Whistler, where you can participate in sight seeing and some skiing too. It is designed for tourists so you don’t have to figure out where to go or what to do as they have your itinerary set. Speak to the front desk and we will book the tour. Welcome to the Hollywood north…

There has been quite the buzz in the air this week due to some very famous musicians coming to town. Last night we had Sir Paul McCartney pay our town a visit, and by all accounts he was pretty awesome, and tonight Vancouver welcomes ‘The Boss’ Bruce Springsteen to entertain us.

It was Mr McCartney’s first visit back to the city after he last toured here with a band he used to be the bass player and sometime songwriter with, you may well have had heard of them….

Back on August 22nd 1964 a British band called The Beatles were riding high as their meteoric rise to fame as the leaders of the British Invasion came to Canada for the first time at The Empire Stadium. Playing in front of over 20,000 people with a set that included just 11 songs 48 years ago. This set was very different, not only was he playing to an audience of over 60,000 – he also had plenty more songs to play with too, armed with material that spanned his whole career as a Beatle, Wings front-man and solo work it was to be a long set, 3 hours to be precise…not bad for a man in his 70s.

Vancouver and Toronto are known to many as the Hollywood north due to their locations being used for the film industry, but as you can see from the kind of musicians that come to tour here, it draws all kinds of entertainment in this very eclectic cultural scene. Vancouver really prides itself as the cultural hub of Canada, between Toronto and here you will do no wrong with the entertainment scene.

Many live acts that come to Vancouver use the city to either begin or end some of their mammoth world tours, the stadium used for some of the bigger acts are BC Place which is home to the BC Lions and Vancouver Whitecaps, or Rogers Arena which is the home of Vancouver Canucks Hockey.

The reference of Vancouver and Toronto being known as the Hollywood north is not something we say facetiously, it really is the case.
Vancouver is home to the Vancouver Film Studio, the largest studio outside of Los Angeles.

Many many films have been recorded in and around Vancouver and the biggest one that has many tourists flocking here is none other than The Twilight films. This film is currently flying high at the box office and Vancouver is very proud to be used to film this popular series.

So choose the Sunset Inn and Suites as somewhere to stay if you are here for an event, we are located close enough to these venues to walk and just outside the noisy buzz of the downtown core so you can get a well earned rest after the buzz has died down.
